I love making this sauce. It’s so easy and quick. The kids like it, even though they prefer butter and cheese. But this red sauce can be used to top or bake over pasta, or meat.
4 cans diced Tomatoes or 8cups diced fresh
1 large Onion, diced
2 cloves Garlic, crushed
3 Tbsp favorite Italian Seasoning
2 Tbsp Balsamic Vinegar
Use a heavy bottom sauce pan or Dutch oven. Over medium-high heat drizzle olive oil (2tsp) and caramelize the onion. Add crushed garlic and Italian seasoning and cook until fragrant. (1 min or less) Add 2 cans of diced tomatoes and scrape up any browned bits. Blend the remaining 2 cans of tomatoes in the blender and add those. Add the Balsamic Vinegar and let simmer for 20min.
This sauce is quick, healthy, tastes fresh and is E.A.S.Y to do. I like to add meatballs, or bake over pasta topped with cheese. Enjoy!
