Sweet Potato Cassarole

I love this dish. I never grew up with the sweet potatoes covered with roasted marshmallows. So that just seems strange to me. In my family, marshmallows were reserved for the hallowed halls if S’mores. My mom learned how to cook these from a sweet southern lady. So yummy and good, it’s like dessert before the pie!

Sweet Potatoes
1 large can Sweet Potatoes
1/2C white Sugar
2 large Eggs
1/4 C Butter melted
1C Coconut

Mix and mash together the ingredients above. Pour into a square Pyrex dish.

2C chopped and toasted Pecans
1/4C Butter cold
1C Brown Sugar
1/2C Flour

Mix topping till crumbly, scoop in top of Sweet Potato mix. Bake at 350degrees for 20min
