I think the title says it all. Chicken fajitas, yum yum! I had a significant amount of chicken to cook through. And, Ive recently started working on my eating habits in an effort to be more healthy. 3 Zaycon Chicken Breasts
Grill Mates Mojito Lime Seasoning
Flour or Corn Tortillas
Lettuce or Cabbage, shredded
Pre-heat oven to 350 degrees. Spray a pyrex casserole dish with non-stick spray, sprinkle the bottom with Johnnys seasoning and Grill Mates seasining. Pat Chicken Breasts dry and place in casserole dish. Sprinkle the top of the chicken with Johnnys and Grill Mates. Don’t use too much because the lime taste is strong (but pleasant) and can overpower the chicken. Cover with foil, bake for 45 min or until chicken is 145 degrees.
Let the chicken rest for 5 min while preparing remaining ingredients for toppings. Slice the chicken crossways in thin slices. Stack on a tortilla and top with the toppings of your choice.
**Healthier alternative is to have a deconstructed fajita, sans tortilla. That way its not quite a salad (heavy on the greens) but is still fajita like and fulfilling.
Well, its What to eat Wednesday and now all of us are sick. Blech. So, in honor of the our illness, here is my recipe for homemade chicken broth. (I use it as a base for any number of dishes) I use a crock pot so I can simmer the stock for hours without having to add more water. This makes for a stronger, more delicious stock. **Picture is chicken and dumplings, one of the many dishes that use this stock.
1 Roast Chicken carcus picked only slighly clean
1 medium Onion
1 clove Garlic
1 pinch each: Thyme, Sage, Rosemary
1 Bay Leaf
6/8 Cups of Water (or until chicken is submerged in 1/2 inch of water)
Add to crockpot and simmer on low for 6 hrs.
If you are like me waking up in the morning is not an easy thing to do. 5am comes WAY too early in this house. For a nutritious and natural way to wake up, I like to drink a smoothie in the morning. Full of good veggies and fruit, especially apple, It helps me start the morning off on the right foot.
If you are especially time crunched in the morning, and what mom isn’t, prep the ingredients the night before while you make the kids’ lunches for school. That way, all you have to do is drop and blend.
My Favorite Green Smoothie Recipe
6 frozen Strawberries

1 med Carrot
1C Baby Spinach
1 med Apple
1 med Orange
Add ingredients to the blender in this order, blend. Add more water if you like a smoother silkier smoothie, less if you like it chunky. The apple in the smoothie helps wake me up, naturally. I find a bit of citrus, orange, brightens up the flavors and keeps out the grassy taste from the spinach. Also, adding almonds with the water is like making your OWN almond milk inside the smoothie. How COOL is that!?! I love it. Creamy without dairy.
Other favorite fruit/veggies Ive added:
- Grapes (fresh or frozen)

During the Thanksgiving food sales, we were able to score a pretty big bird (23lbs) for only 80 cents a pound. Meat is NEVER that cheap. So I picked up another and froze it for later in the year too. 🙂
Now, it’s the week after Thanksgiving. What does that mean for many families? Killer leftovers, until all you have is turkey. I pre-packed my lunches for the week using all the excellent sides: green beans, stuffing, cranberries, sweet potatoes and Turkey.
Then, I had to figure out what to do with even more turkey. I started brainstorming and came up with a few ideas that I though I would share.
A few standard dishes and a few new ones too!
